Description
Delicious salmon tortilla wraps served with a refreshing tzatziki and fresh vegetables.
Ingredients

- 14 oz salmon, cut into cubes
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 2 cucumbers, chopped
- 2 tomatoes, chopped
- 1/2 avocado, sliced
- 2 scallions, sliced
- 2 1/2 cups salad greens
- 1 cup chopped herbs and arugula (mint and basil)
- 1 cup yogurt
- 1–2 garlic cloves, minced
- 1 tbsp dill, thinly chopped
- 1/2 cup cucumber, thinly chopped
- 5–6 pitted olives, chopped
- 4 gluten-free tortillas
Instructions
- Preheat your oven to 350°F (180°C).
- Cut the salmon into bite-sized cubes and spread them in a single layer on a baking sheet lined with parchment paper for easy clean-up. Drizzle the salmon with olive oil, lemon juice, and season with salt and pepper. Bake for 12-15 minutes or until the salmon is cooked through and slightly golden.
- Finely chop cucumber and dill for the tzatziki. In a small bowl, combine the yogurt, minced garlic, chopped dill, cucumber, and salt. Mix well and set aside to allow the flavors to meld.
- Chop cucumbers, tomatoes, avocado, scallions, and mix them with salad greens and the chopped herbs and arugula. Season with salt, pepper, lemon juice, and a drizzle of olive oil. Toss everything together until well combined.
- Place a gluten-free tortilla on a flat surface. Add a generous portion of baked salmon, a spoonful of tzatziki, and a handful of salad. Sprinkle chopped olives over the top. Wrap tightly and serve immediately.
Notes
- Feel free to customize the herbs based on your preference.
- For a spicy kick, add some chili flakes to the salmon before baking.
- Leftover tzatziki can be used as a dip for vegetables or crackers.
