Description

Delicious salmon tortilla wraps served with a refreshing tzatziki and fresh vegetables.


Ingredients

  • 14 oz salmon, cut into cubes
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 2 cucumbers, chopped
  • 2 tomatoes, chopped
  • 1/2 avocado, sliced
  • 2 scallions, sliced
  • 2 1/2 cups salad greens
  • 1 cup chopped herbs and arugula (mint and basil)
  • 1 cup yogurt
  • 12 garlic cloves, minced
  • 1 tbsp dill, thinly chopped
  • 1/2 cup cucumber, thinly chopped
  • 56 pitted olives, chopped
  • 4 gluten-free tortillas

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cut the salmon into bite-sized cubes and spread them in a single layer on a baking sheet lined with parchment paper for easy clean-up. Drizzle the salmon with olive oil, lemon juice, and season with salt and pepper. Bake for 12-15 minutes or until the salmon is cooked through and slightly golden.
  3. Finely chop cucumber and dill for the tzatziki. In a small bowl, combine the yogurt, minced garlic, chopped dill, cucumber, and salt. Mix well and set aside to allow the flavors to meld.
  4. Chop cucumbers, tomatoes, avocado, scallions, and mix them with salad greens and the chopped herbs and arugula. Season with salt, pepper, lemon juice, and a drizzle of olive oil. Toss everything together until well combined.
  5. Place a gluten-free tortilla on a flat surface. Add a generous portion of baked salmon, a spoonful of tzatziki, and a handful of salad. Sprinkle chopped olives over the top. Wrap tightly and serve immediately.

  • Feel free to customize the herbs based on your preference.
  • For a spicy kick, add some chili flakes to the salmon before baking.
  • Leftover tzatziki can be used as a dip for vegetables or crackers.
