- 1 pound large shrimp (with or without tails)
- 1 tablespoon oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper powder
- 1/4 teaspoon ground black pepper
Instructions
- Prep shrimp: Pat the shrimp dry with paper towels to remove excess moisture. Transfer them to a bowl, add the remaining ingredients, and toss until the shrimp are evenly coated.
- Air fry: Preheat air fryer to 400°F. When hot, place shrimp in a single layer and cook for 7 to 8 minutes or until cooked through and tender. Cooking time: Large sized shrimp (21 to 25 per pound) cooks in 7 to 8 minutes, whereas medium ones (31 to 40 per pound) will cook in 6 to 7 minutes.
- Serve with lime wedges or use it to make tacos, rice bowls, quesadillas, or Mexican salads.
- To make shrimp bowls, layer the cooked shrimp over cilantro lime rice (or plain rice), then top with sliced avocado and fresh tomato salad, black beans, and sweet corn. Finish with a generous drizzle of sour cream sauce.
- Make avocado and tomato salad: Gently toss one large diced avocado with ½ cup chopped tomatoes, 2 tablespoons thinly sliced red onion, a squeeze of fresh lemon juice, a little finely chopped jalapeño, and salt to taste. Mix carefully to keep the avocado chunks intact.
- Make sour cream sauce: Stir sour cream with salt, lemon juice, and a splash of water.
