Description
Delicious blueberry cream cheese blintzes filled with a sweet cream cheese mixture and topped with powdered sugar.

- 4 crepes or thin pancakes
- ½ cup cream cheese, softened
- ¼ cup powdered sugar
- ½ cup fresh or frozen blueberries
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 1 tsp butter (for pan)
- Extra powdered sugar for dusting
Instructions
- In a bowl, mix cream cheese, powdered sugar, lemon zest, and vanilla until smooth.
- Spoon a line of the filling onto each crepe, add a few blueberries, and roll up tightly.
- Heat butter in a skillet over medium heat.
- Cook each blintz seam-side down until golden, then flip and brown the other side.
- Remove from skillet and let cool slightly.
- Dust with powdered sugar.
- Serve warm with extra blueberries on the side.
Notes
- For a richer flavor, use full-fat cream cheese.
- These can be made ahead of time and reheated before serving.
- Feel free to substitute other fruits if desired.
