Description

Ingredients

  • 4 crepes or thin pancakes
  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar
  • ½ cup fresh or frozen blueberries
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp butter (for pan)
  • Extra powdered sugar for dusting

Instructions

  1. In a bowl, mix cream cheese, powdered sugar, lemon zest, and vanilla until smooth.
  2. Spoon a line of the filling onto each crepe, add a few blueberries, and roll up tightly.
  3. Heat butter in a skillet over medium heat.
  4. Cook each blintz seam-side down until golden, then flip and brown the other side.
  5. Remove from skillet and let cool slightly.
  6. Dust with powdered sugar.
  7. Serve warm with extra blueberries on the side.
