A delicious and unique dessert that combines the flavors of brown sugar boba milk tea into a moist cake, topped with whipped cream and tapioca pearls.
Ingredients
- Cake flour – 1 cup
- Eggs – 4 large (separated)
- Milk tea (strongly brewed) – ½ cup
- Brown sugar – ½ cup
- Tapioca pearls (boba) – 1 cup cooked
- Heavy cream – 1 cup
- Brown sugar syrup – 2 tbsp (plus extra for drizzle)
- Vegetable oil – ¼ cup
- Baking powder – 1 tsp
Instructions
- Brew strong milk tea and let cool.
- Whisk egg yolks, brown sugar, milk tea, and oil until smooth. Add sifted cake flour and baking powder.
- Beat egg whites to stiff peaks, then fold gently into batter.
- Pour into a lined round pan and bake for 45–50 minutes until springy.
- Whip cream with brown sugar syrup for a milk tea–flavored frosting.
- Spread whipped topping over the cooled cake.
- Pile warm cooked boba pearls on top and drizzle with more brown sugar syrup.
Notes
- Ensure the milk tea is strongly brewed for the best flavor.
- Let the cake cool completely before frosting to prevent melting.
- For a richer flavor, use dark brown sugar instead of light brown sugar.
