Ingredients

  • Cake flour – 1 cup
  • Eggs – 4 large (separated)
  • Milk tea (strongly brewed) – ½ cup
  • Brown sugar – ½ cup
  • Tapioca pearls (boba) – 1 cup cooked
  • Heavy cream – 1 cup
  • Brown sugar syrup – 2 tbsp (plus extra for drizzle)
  • Vegetable oil – ¼ cup
  • Baking powder – 1 tsp

Instructions

  1. Brew strong milk tea and let cool.
  2. Whisk egg yolks, brown sugar, milk tea, and oil until smooth. Add sifted cake flour and baking powder.
  3. Beat egg whites to stiff peaks, then fold gently into batter.
  4. Pour into a lined round pan and bake for 45–50 minutes until springy.
  5. Whip cream with brown sugar syrup for a milk tea–flavored frosting.
  6. Spread whipped topping over the cooled cake.
  7. Pile warm cooked boba pearls on top and drizzle with more brown sugar syrup.
