Description

A simple and delicious bruschetta recipe topped with fresh tomatoes, basil, and garlic.

Ingredients

Scale
  • 1 baguette
  • 23 tablespoons extra virgin olive oil
  • 1 clove garlic (minced)
  • ¼ teaspoon homemade Italian seasoning (optional)
  • 5 large or 8 medium Roma tomatoes
  • 1/3 cup fresh basil leaves (chopped)
  • 3 garlic cloves (minced)
  • 1 oz (1/3 cup) parmesan cheese
  • 1 tablespoon balsamic vinegar
  • 1 ½ tablespoons extra virgin olive oil
  • ½ teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Homemade balsamic glaze for drizzle

Instructions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper or foil.
  2. Slice baguette into ½-inch thick slices.
  3. Mix olive oil and garlic together in a small bowl with Italian seasoning, if using. Brush on both sides of the baguette slices. Spoon any remaining garlic onto the bread.
  4. Toast bread about 6-10 minutes, until golden and very well toasted.
  5. While the bread is toasting, prepare the bruschetta topping. Cut tomatoes in half, then spoon out the seeds/juicy, wet centers. Lay halves on paper towels and pat gently to dry. Dice tomatoes.
  6. In a medium bowl, stir to combine tomatoes, basil, garlic, parmesan, balsamic vinegar, olive oil, and salt and pepper to taste.
  7. Spoon over toasted bread. Optionally, drizzle bruschetta with balsamic glaze.
  8. Enjoy! This homemade balsamic glaze lends a delicious tangy sweetness.
