Description

Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon butter (for melting chocolate)

Instructions

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix melted butter and cocoa powder until smooth and glossy.
  3. Add sugar, eggs, and vanilla extract; beat until thick and creamy.
  4. Stir in flour, baking soda, and salt just until combined.
  5. Chill the dough in the refrigerator for 30 minutes to prevent spreading.
  6. In a separate bowl, combine peanut butter and powdered sugar; roll into small 1-inch balls and chill.
  7. Roll cookie dough into balls, place on baking sheet, and flatten slightly.
  8. Bake for 8–10 minutes, until edges are set but centers look soft.
  9. Immediately press a peanut butter ball into the center of each warm cookie.
  10. In a small bowl, melt chocolate chips with 1 tablespoon of butter until smooth.
  11. Drizzle or spread melted chocolate over each cookie.
  12. Let cookies cool until the chocolate sets before serving or storing.

Notes

  • Chilling the cookie dough prevents spreading and ensures thicker cookies.
  • You can adjust the size of the peanut butter balls for more or less filling.
