- 2 boneless, skinless chicken breasts
- 4 slices thick-cut bread (sourdough or brioche recommended)
- 4 slices cheddar cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and black pepper to taste
- 2 tablespoons hot sauce
- 1 tablespoon mayonnaise
- 1 tablespoon mustard
- Chopped fresh parsley for garnish
Instructions
- Prepare the Chicken:
– Slice the chicken breasts in half horizontally to create thinner pieces.
– Season the chicken with paprika, cayenne pepper, salt, and black pepper. - Cook the Chicken:
– Heat olive oil in a skillet over medium-high heat.
– Cook the chicken for 3-4 minutes on each side or until golden and cooked through.
– Remove from heat and coat the chicken in hot sauce. - Prepare the Sauce:
– In a small bowl, mix mayonnaise and mustard. Set aside. - Assemble the Sandwich:
– Butter one side of each bread slice.
– Spread the mayonnaise-mustard mixture on the unbuttered side.
– Place a slice of cheddar cheese on the mayo side of two bread slices.
– Add the cooked chicken on top of the cheese. - Stack and Grill:
– Stack one half of the sandwich onto the other half, making sure cheese is on both layers of chicken.
– Top with the remaining bread slices, butter side up. - Grill the Sandwiches:
– Heat a skillet over medium heat.
– Grill each sandwich for 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted. - Garnish and Serve:
– Sprinkle chopped fresh parsley on top of the sandwiches.
– Serve hot.
