Description

A delicious cheesy spicy chicken sandwich that stacks layers of flavor and texture.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 4 slices thick-cut bread (sourdough or brioche recommended)
  • 4 slices cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons hot sauce
  • 1 tablespoon mayonnaise
  • 1 tablespoon mustard
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the Chicken:
    – Slice the chicken breasts in half horizontally to create thinner pieces.
    – Season the chicken with paprika, cayenne pepper, salt, and black pepper.
  2. Cook the Chicken:
    – Heat olive oil in a skillet over medium-high heat.
    – Cook the chicken for 3-4 minutes on each side or until golden and cooked through.
    – Remove from heat and coat the chicken in hot sauce.
  3. Prepare the Sauce:
    – In a small bowl, mix mayonnaise and mustard. Set aside.
  4. Assemble the Sandwich:
    – Butter one side of each bread slice.
    – Spread the mayonnaise-mustard mixture on the unbuttered side.
    – Place a slice of cheddar cheese on the mayo side of two bread slices.
    – Add the cooked chicken on top of the cheese.
  5. Stack and Grill:
    – Stack one half of the sandwich onto the other half, making sure cheese is on both layers of chicken.
    – Top with the remaining bread slices, butter side up.
  6. Grill the Sandwiches:
    – Heat a skillet over medium heat.
    – Grill each sandwich for 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
  7. Garnish and Serve:
    – Sprinkle chopped fresh parsley on top of the sandwiches.
    – Serve hot.

Notes

  • For extra spiciness, add more cayenne pepper to the seasoning.
  • Use a panini press for even cooking and perfect sandwich presses.
  • Experiment with different cheeses like Swiss or mozzarella for varied flavors.
  • Add extra toppings like sliced jalapeños or onions for extra texture and taste.
