Description

Delicious cherry cheesecake brownies with a rich chocolate brownie base and a creamy cheesecake layer topped with cherry pie filling.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 8 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and grease lightly.
  2. In a large bowl, whisk melted butter with granulated and brown sugar until smooth.
  3. Add eggs, one at a time, beating after each. Stir in vanilla extract.
  4. Sift in cocoa powder, flour, and salt. Fold gently until just combined — do not overmix.
  5. Spread about ¾ of batter evenly in pan.
  6. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until creamy.
  7. Spread cheesecake mixture over brownie layer.
  8. Spoon cherry pie filling over the cheesecake layer.
  9. Drop remaining brownie batter on top in spoonfuls. Gently swirl with a knife for marbled effect.
  10. Bake 35–40 minutes, until center is just set.
  11. Cool completely, then slice into squares.

Notes

  • Make sure not to overmix the brownie batter to ensure a nice texture.
  • For a richer flavor, use dark cocoa powder.
