- 2 cups fresh cherries, pitted
- 1 cup mascarpone cheese
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 pre-made pie crust (9-inch)
Instructions
- Preheat your oven to 350°F (175°C) and fit the pie crust into a tart pan.
- In a mixing bowl, toss pitted cherries with 1/4 cup sugar and let sit for 10 minutes.
- In another bowl, whisk together mascarpone cheese, remaining sugar, and vanilla until smooth.
- Spread the mascarpone mixture evenly in the pie crust, then layer the cherries on top.
- Bake for 30-35 minutes or until edges are golden and filling jiggles slightly.
- Cool completely before slicing. Serve chilled or at room temperature.
Notes
- For best flavor, use fresh cherries. You can substitute with frozen cherries if fresh ones are unavailable.
