- 1/2 cup almonds
- 2 tablespoons cocoa powder
- 1 tablespoon coconut oil
- 1/2 cup shredded coconut (for coating)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Soak the Dates: Begin by soaking the pitted dates in warm water for about 10 minutes to soften them. Drain well.
- Blend the Base: In a food processor, add the soaked dates, almonds, cocoa powder, coconut oil, vanilla extract, and salt. Blend until the mixture is well combined and sticky. It should hold together when pressed.
- Form the Balls: Using a tablespoon, scoop small amounts of the mixture and roll them between your hands to form smooth balls.
- Coat with Coconut: Spread the shredded coconut on a plate. Roll each ball in the coconut until well coated.
- Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.
