Description

Delicious and nutritious energy balls made with dates, almonds, cocoa powder, and coconut.

Ingredients

Scale
  • 1 cup pitted dates
  • 1/2 cup almonds
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut oil
  • 1/2 cup shredded coconut (for coating)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Soak the Dates: Begin by soaking the pitted dates in warm water for about 10 minutes to soften them. Drain well.
  2. Blend the Base: In a food processor, add the soaked dates, almonds, cocoa powder, coconut oil, vanilla extract, and salt. Blend until the mixture is well combined and sticky. It should hold together when pressed.
  3. Form the Balls: Using a tablespoon, scoop small amounts of the mixture and roll them between your hands to form smooth balls.
  4. Coat with Coconut: Spread the shredded coconut on a plate. Roll each ball in the coconut until well coated.
  5. Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.

Notes

  • Storage: Store these energy balls in an airtight container in the refrigerator for up to a week, or in the freezer for up to a month.
  • Variations: You can add other ingredients like chia seeds, flaxseeds, or protein powder for an extra nutritional boost.
  • Nut Substitutes: Cashews or walnuts can be used in place of almonds for a different nutty flavor.
