Ingredients

  • 1/4 cup Powdered sugar
  • 3 large Eggs
  • 1 cup Sugar
  • 1/2 cup Lemon juice
  • 1 tbsp Lemon zest
  • 2 tbsp All-purpose flour
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a shortbread crust with flour, butter, and powdered sugar; press into a baking dish.
  2. Bake crust for 12–15 minutes until lightly golden.
  3. Whisk eggs, sugar, lemon juice, zest, flour, and vanilla until smooth.
  4. Pour lemon custard over hot crust and return to oven for 20 minutes, until set but slightly jiggly.
  5. Cool completely, then refrigerate for at least 1 hour.
  6. Slice into squares and dust with powdered sugar.
  7. Serve chilled for the best creamy texture.
