- 1/2 tsp Baking powder (optional)
Instructions
- Preheat oven to 350°F (175°C). Prepare a shortbread crust with flour, butter, and powdered sugar; press into a baking dish.
- Bake crust for 12–15 minutes until lightly golden.
- Whisk eggs, sugar, lemon juice, zest, flour, and vanilla until smooth.
- Pour lemon custard over hot crust and return to oven for 20 minutes, until set but slightly jiggly.
- Cool completely, then refrigerate for at least 1 hour.
- Slice into squares and dust with powdered sugar.
- Serve chilled for the best creamy texture.
