This Creamy Mandarin Layered Cake is a delightful dessert featuring layers of fluffy cake, whipped cream, and fresh mandarin oranges.

- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2–3 fresh mandarin oranges (peeled and segmented)
- Mandarins for garnish
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter (softened)
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
Instructions
- Prepare the Cake Layers:
Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy.
Add the eggs one at a time, beating well after each addition.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with the milk and vanilla extract. Mix until just combined.
Divide the batter evenly into the prepared cake pans.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely. - Make the Cream:
In a large chilled bowl, whip the heavy cream until soft peaks form.
Gradually add the powdered sugar and vanilla extract. Continue to whip until stiff peaks form. - Assemble the Cake:
Place the first cake layer on a serving plate. Spread a generous amount of whipped cream over the top, then add a layer of mandarin segments.
Repeat the process with the second and third cake layers.
Finish with a layer of whipped cream and garnish with whole mandarin oranges or segments on top.
Notes
- Make sure the cake layers are completely cool before layering with cream to prevent melting.
- If mandarins are not available, canned mandarin segments can be used, but be sure to drain them well.
- For an extra citrus flavor, add a teaspoon of mandarin zest to the cake batter.
- Serve immediately or refrigerate and serve within a day for the freshest taste.
