Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, ground pecans, sugar, and melted butter. Mix well until all components are evenly combined.
- Press the crust mixture into the bottom of a 9×13-inch baking dish.
- Bake for 10 minutes; then set aside to cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and beat until well combined.
- Incorporate eggs one at a time, mixing gently after each addition.
- Pour the cheesecake mixture over the cooled crust and spread evenly.
- Bake the Cheesecake:
- Bake for 25-30 minutes, or until the center is set.
- Allow the cheesecake to cool, then refrigerate for at least 2 hours.
- Prepare the Caramel Layer:
- In a saucepan, combine brown sugar, heavy cream, butter, and a pinch of salt.
- Cook over medium heat, stirring constantly, until the mixture thickens (about 5-7 minutes).
- Remove from heat and stir in vanilla extract.
- Allow the caramel to cool slightly before pouring.
- Assemble the Cheesecake:
- Pour the caramel over the chilled cheesecake.
- Top with chopped pecans, evenly spreading them over the caramel layer.
- Refrigerate again for 1 hour, allowing the caramel to set.
- Serve:
- Slice into squares and garnish with extra pecans if desired.
- Serve chilled for the best texture.
