Refreshingly light cucumber sandwiches made with cream cheese and fresh dill.

- 2 English cucumbers (or regular cucumbers)
- 8 oz cream cheese (plain or flavored)
- 2 tbsp fresh dill (chopped)
- 1 tbsp lemon juice
- Salt (to taste)
- Pepper (to taste)
- 4 slices whole wheat bread (or any preferred bread)
Instructions
- Start by washing your cucumbers thoroughly. Slice them thinly using a sharp knife or a mandoline for even thickness, aiming for about 1/8-inch slices.
- In a mixing bowl, combine the cream cheese, chopped fresh dill, and a squeeze of lemon juice. Use a fork to blend everything until smooth, seasoning with a pinch of salt and pepper.
- Spread a generous layer of the cream cheese mixture onto one slice of bread. Layer the cucumber slices on top, overlapping them slightly, and add more dill or a sprinkle of salt if desired.
- Place another slice of bread on top to complete the sandwich and gently press down to secure everything in place.
- Use a sharp knife to cut the sandwiches into halves or quarters, arrange them on a platter, and enjoy!
