This moist and flavorful strawberry loaf cake is perfect for any occasion, bursting with fresh strawberries and vanilla.

- 1 cup unsalted butter
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 1/2 cups all-purpose flour
- 1 cup fresh strawberries, pureed
- 1 cup whole milk
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped fresh strawberries
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
- Wash and hull the strawberries. Puree about 1 cup of strawberries in a blender or food processor. If you like, reserve a few pieces for garnish.
- In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and the strawberry puree.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.
- Gently fold in the chopped strawberries, ensuring even distribution throughout the batter.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
Notes
- For extra flavor, add a splash of lemon juice to the strawberry puree.
- This cake can be served plain or with whipped cream on top.
