Description

Ingredients

  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 cup fresh strawberries, pureed
  • 1 cup whole milk
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped fresh strawberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
  2. Wash and hull the strawberries. Puree about 1 cup of strawberries in a blender or food processor. If you like, reserve a few pieces for garnish.
  3. In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and the strawberry puree.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.
  7. Gently fold in the chopped strawberries, ensuring even distribution throughout the batter.
  8. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  10. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

  • For extra flavor, add a splash of lemon juice to the strawberry puree.
