- 1 (8 oz) box Jiffy corn muffin mix
- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can creamed corn
- 1 cup sour cream
- ½ cup unsalted butter, melted
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or similar casserole dish.
- In a large bowl, combine the Jiffy corn muffin mix, whole corn, creamed corn, sour cream, and melted butter. Stir until just combined. The mixture will be slightly lumpy and thick—don’t overmix.
- Fold in the shredded cheddar cheese. This gives the casserole that irresistible gooey, savory finish.
- Pour the mixture into your prepared baking dish and smooth the top with a spatula. Bake uncovered for about 45–50 minutes, or until the top is golden and the center is set. A toothpick inserted in the center should come out mostly clean.
- Let it rest for 5 minutes before serving. This helps it firm up a bit and makes for easier slicing.
