  • 1 (8 oz) box Jiffy corn muffin mix
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or similar casserole dish.
  2. In a large bowl, combine the Jiffy corn muffin mix, whole corn, creamed corn, sour cream, and melted butter. Stir until just combined. The mixture will be slightly lumpy and thick—don’t overmix.
  3. Fold in the shredded cheddar cheese. This gives the casserole that irresistible gooey, savory finish.
  4. Pour the mixture into your prepared baking dish and smooth the top with a spatula. Bake uncovered for about 45–50 minutes, or until the top is golden and the center is set. A toothpick inserted in the center should come out mostly clean.
  5. Let it rest for 5 minutes before serving. This helps it firm up a bit and makes for easier slicing.
