Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Prepare Cake Batter: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Sift together cake flour, baking powder, and salt in a separate bowl. Gradually add the flour mixture to the creamed mixture, alternating with milk. Begin and end with dry ingredients. Mix until just combined.
  3. Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  4. Prepare Whipped Cream: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Prepare Peaches: Toss sliced peaches with lemon juice to prevent browning.
  6. Assemble the Cake: Place one layer of cake on a serving plate. Spread a layer of whipped cream over the cake and arrange a layer of sliced peaches on top. Repeat the process with the second layer. Place the final cake layer on top and spread whipped cream over the top and sides of the cake. Decorate the top with more peach slices and dust with confectioners’ sugar.
