- 2 Salmon fillets
- 4 tbsp Butter
- 4 cloves Garlic, minced
- 1 lb Baby potatoes, halved
- 2 cups Broccoli florets
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1/4 cup Heavy cream
- Salt, to taste
- Pepper, to taste
- Fresh parsley, chopped
Instructions
- Preheat oven to 400°F.
- Toss halved baby potatoes with olive oil, salt, and pepper; roast for 25–30 minutes until golden.
- Meanwhile, sauté broccoli in olive oil until lightly charred and tender; set aside.
- Season salmon fillets with salt and pepper, then sear in a skillet with butter until crisp on the outside.
- In the same pan, add minced garlic, butter, and a splash of cream to create a silky sauce.
- Squeeze in lemon juice and simmer until thickened slightly.
- Pour the garlic butter sauce over salmon and garnish with chopped parsley.
- Serve hot with roasted potatoes and broccoli.
