Description
A delightful and moist sponge cake drenched in golden syrup, perfect for serving with vanilla ice cream.
Ingredients
Scale
- 1 cup (200g) golden syrup
- 1 cup (200g) unsalted butter, softened
- 1 cup (200g) caster sugar
- 4 large eggs
- 2 cups (250g) self-raising flour
- 1/2 tsp baking powder
- 1/4 cup (60ml) milk
- 1 tsp vanilla extract
- A pinch of salt
- Vanilla ice cream (for serving)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a baking dish.
- Prepare the Syrup Base: Pour the golden syrup into the base of the baking dish, spreading it evenly.
- Cream Butter and Sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add Eggs: Beat the eggs in one at a time, ensuring each is fully incorporated before adding the next.
- Combine Dry Ingredients: In a separate bowl, sift together the self-raising flour, baking powder, and salt.
- Mix Together: Gradually fold the dry ingredients into the butter mixture, alternating with the milk. Add the vanilla extract and mix until smooth.
- Bake the Cake: Pour the batter over the golden syrup in the dish. Smooth the top with a spatula and bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.
- Serve: Allow to cool for a few minutes, then serve warm with a scoop of vanilla ice cream on top.
Notes
- Ensure all ingredients are at room temperature before starting, as this helps in creating a smooth batter.
- To enhance the flavor, you can add a teaspoon of lemon zest to the batter.
- Be careful not to overmix the batter to keep the sponge light and airy.
- For an extra indulgent sauce, mix a little cream into the golden syrup before pouring it into the base of the dish.
