Gooey S’mores Cookie Bars are a delicious and easy-to-make dessert that combines the classic flavors of s’mores in a convenient bar form.

- 1 sleeve graham crackers (crushed or whole)
- 2 cups mini marshmallows
- 1 ½ cups semi-sweet chocolate chips
- ½ cup unsalted butter (melted)
- ½ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- Combine melted butter, brown sugar, egg, and vanilla; mix well.
- Stir in crushed graham crackers and salt to form a soft dough, then press half into the pan.
- Layer marshmallows and chocolate chips evenly over the dough.
- Press remaining dough lightly on top, leaving some filling exposed.
- Bake for 20–25 minutes until golden and gooey.
- Cool slightly, then slice into thick bars and enjoy melty, campfire-style goodness.
Notes
- For a richer flavor, use dark chocolate chips instead of semi-sweet.
- Store leftovers in an airtight container for up to 3 days.
