  • 1 cup chicken broth (or vegetable broth)
  • 1 cup whole milk
  • Salt and pepper, to taste
  • 1/2 teaspoon ground nutmeg (optional)
  • 1 1/2 cups crispy fried onions, divided

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add green beans and cook for about 4–5 minutes until just tender but still vibrant. Drain and immediately transfer to an ice bath to stop the cooking process. This step ensures they stay crisp-tender and don’t become mushy in the oven.
  2. Make the Creamy Mushroom Sauce: In a large skillet, melt the butter over medium heat. Add chopped onions and cook until soft and translucent, about 4 minutes. Add the sliced mushrooms and sauté until golden and their moisture evaporates—another 5–6 minutes. Stir in the garlic and cook for 30 seconds. Sprinkle in the flour and stir constantly for 1–2 minutes to cook off the raw taste. Gradually whisk in the broth and then the milk. Let the mixture simmer until thickened—about 5–7 minutes. Season with salt, pepper, and nutmeg if using.
  3. Combine and Layer: Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the blanched green beans with the creamy mushroom sauce. Fold in 2/3 cup of the crispy fried onions.
  4. Bake Until Golden: Transfer the mixture to a 9×13-inch baking dish. Spread evenly and top with the remaining fried onions. Bake uncovered for 25–30 minutes until the sauce is bubbling and the top is golden brown.
  5. Serve and Savor: Let it rest for 5–10 minutes before serving. This gives the sauce a chance to settle and intensify in flavor.
