Description

A delicious creamy pasta dish with grilled chicken, perfect for dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon Italian seasoning
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Rinse and pat dry the chicken breasts. Season them with salt, pepper, and Italian seasoning.
  2. Grill the Chicken: Heat olive oil in a grill pan over medium-high heat. Add chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the pan and let it rest. Slice the chicken into strips.
  3. Cook the Pasta: In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
  4. Prepare the Alfredo Sauce: In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Pour in the heavy cream and bring to a gentle simmer. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Combine Pasta and Sauce: Add the cooked penne pasta to the Alfredo sauce and toss to coat evenly. Add sliced grilled chicken on top and toss gently.
  6. Serve: Transfer the Grilled Chicken Alfredo Pasta to a serving platter. Garnish with freshly chopped parsley.

Notes

  • For added flavor, marinate the chicken in olive oil, garlic, and herbs for 1-2 hours before cooking.
  • Ensure not to overcook the pasta; it should be firm to the bite.
  • You can add vegetables like broccoli or spinach to the pasta for extra nutrition.
  • Use freshly grated Parmesan cheese for a richer flavor in the sauce.
  • Adjust the consistency of the sauce by adding more cream or cheese as desired.
