- 10 oz rigatoni pasta
- 1 cup heavy cream
- 1 cup spinach, chopped
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt, pepper, and parsley for garnish
Instructions
- Cook rigatoni according to package instructions; drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning.
- Grill or pan-sear chicken 5–6 minutes per side until golden and cooked through; slice into strips.
- In a skillet, melt butter and sauté garlic until fragrant.
- Add cream and spinach, simmering until thickened, then stir in Parmesan cheese.
- Toss rigatoni in the creamy spinach sauce and plate alongside the grilled chicken.
- Garnish with parsley and extra Parmesan before serving.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- Feel free to substitute chicken with shrimp or tofu for a different protein option.
