Ingredients

- 4 large egg yolks
- 3/4 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 6 tablespoons unsalted butter
Instructions
- In a medium saucepan (off heat), whisk together 4 large egg yolks and 3/4 cup granulated sugar until smooth and pale.
- Add 1/2 cup fresh lemon juice and 1 tablespoon lemon zest. Whisk until fully combined.
- Cook the mixture over low heat, stirring constantly for 8–10 minutes, until thickened and coats the back of a spoon.
- Remove from heat and stir in 6 tablespoons unsalted butter, one piece at a time, until fully melted and incorporated.
- Strain the curd through a fine mesh sieve into a bowl. Let it cool to room temperature, then refrigerate.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- This lemon curd is great as a filling for pastries or as a topping for desserts.
