Description

A tangy and smooth lemon curd perfect for desserts.


Ingredients

Scale
  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 6 tablespoons unsalted butter

Instructions

  1. In a medium saucepan (off heat), whisk together 4 large egg yolks and 3/4 cup granulated sugar until smooth and pale.
  2. Add 1/2 cup fresh lemon juice and 1 tablespoon lemon zest. Whisk until fully combined.
  3. Cook the mixture over low heat, stirring constantly for 8–10 minutes, until thickened and coats the back of a spoon.
  4. Remove from heat and stir in 6 tablespoons unsalted butter, one piece at a time, until fully melted and incorporated.
  5. Strain the curd through a fine mesh sieve into a bowl. Let it cool to room temperature, then refrigerate.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • This lemon curd is great as a filling for pastries or as a topping for desserts.
