- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg

- 1 1/2 cups sweetened shredded coconut
- 14 oz soft caramels
- 1/4 cup heavy cream
- 8 oz dark chocolate, melted
Instructions
- Preheat oven to 350°F (175°C).
- Prepare shortbread dough with butter, sugar, flour, egg, and vanilla.
- Roll out dough, cut into circles with a hole in the center, and bake for 10–12 minutes until lightly golden.
- Toast shredded coconut until golden brown.
- Melt caramels with heavy cream, then stir in toasted coconut.
- Spread caramel-coconut mixture over cooled cookies.
- Dip the bottom of each cookie in melted dark chocolate and drizzle more on top.
- Let set on parchment paper before stacking and serving.
