Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups sweetened shredded coconut
  • 14 oz soft caramels
  • 1/4 cup heavy cream
  • 8 oz dark chocolate, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare shortbread dough with butter, sugar, flour, egg, and vanilla.
  3. Roll out dough, cut into circles with a hole in the center, and bake for 10–12 minutes until lightly golden.
  4. Toast shredded coconut until golden brown.
  5. Melt caramels with heavy cream, then stir in toasted coconut.
  6. Spread caramel-coconut mixture over cooled cookies.
  7. Dip the bottom of each cookie in melted dark chocolate and drizzle more on top.
  8. Let set on parchment paper before stacking and serving.
