- 4 boneless, skinless chicken breasts
- 3 chipotle peppers in adobo sauce, finely chopped
- 1/4 cup fresh lime juice (about 2 limes)
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp honey (optional)
Instructions
- Prepare the marinade by combining chipotle peppers, lime juice, garlic, cumin, paprika, olive oil, salt, and pepper in a bowl.
- Place chicken breasts in a resealable bag or dish and pour the marinade over them. Ensure they’re fully coated and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat or oven to 400°F (200°C).
- Grill chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Look for grill marks.
- Let the chicken rest for 5 minutes before slicing.
- Serve with tortillas or salads, garnished with lime wedges and cilantro if desired.
Notes
- This recipe is great for meal prep. You can marinate the chicken in advance and store it in the refrigerator.
