- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 cup Unsalted Butter
- 1 cup Brown Sugar
- 1/3 cup Maple Syrup
- 2 Large Eggs
- 3–4 medium Mashed Bananas
- 1 teaspoon Vanilla Extract
- 1/2 cup Plain Yogurt or Sour Cream
- 1 cup Walnuts or Pecans
- 1/4 cup Additional Maple Syrup
Instructions
- Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
- In a mixing bowl, sift together the flour, baking soda, and salt.
- Beat softened butter with brown sugar until light and fluffy for about 3-4 minutes.
- Add maple syrup and mix for an additional minute. Then, add eggs one at a time.
- Incorporate mashed bananas and vanilla, mixing until well combined.
- Fold in the dry ingredients gradually, adding yogurt in between.
- Stir in chopped walnuts or pecans, saving some for topping.
- Pour the batter into the loaf pan and sprinkle reserved nuts over the top.
- Bake for 50-60 minutes, checking for doneness with a toothpick.
- Warm additional maple syrup and drizzle over the warm bread after baking.
- Cool in the pan before transferring to a rack.
