Description

Ingredients

  • 1/2 cup Unsalted Butter
  • 1 cup Brown Sugar
  • 1/3 cup Maple Syrup
  • 2 Large Eggs
  • 34 medium Mashed Bananas
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Plain Yogurt or Sour Cream
  • 1 cup Walnuts or Pecans
  • 1/4 cup Additional Maple Syrup

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
  2. In a mixing bowl, sift together the flour, baking soda, and salt.
  3. Beat softened butter with brown sugar until light and fluffy for about 3-4 minutes.
  4. Add maple syrup and mix for an additional minute. Then, add eggs one at a time.
  5. Incorporate mashed bananas and vanilla, mixing until well combined.
  6. Fold in the dry ingredients gradually, adding yogurt in between.
  7. Stir in chopped walnuts or pecans, saving some for topping.
  8. Pour the batter into the loaf pan and sprinkle reserved nuts over the top.
  9. Bake for 50-60 minutes, checking for doneness with a toothpick.
  10. Warm additional maple syrup and drizzle over the warm bread after baking.
  11. Cool in the pan before transferring to a rack.
