Description

Spooky carved bell peppers filled with savory rice and beef for a festive Halloween dinner.


Ingredients

Scale
  • 4 Green bell peppers
  • 1 lb Ground beef (or turkey)
  • 2 cups Cooked rice
  • 1 cup Tomato sauce
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 tsp Italian seasoning
  • 2 tbsp Olive oil
  • Salt & pepper to taste
  • Shredded cheese (optional for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and cut the tops off bell peppers, scooping out seeds.
  2. Use a small knife to carve Jack-O’-Lantern faces into each pepper.
  3. In a skillet, sauté onion and garlic in olive oil, add ground beef, and cook until browned.
  4. Stir in rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Stuff each pepper with the filling and place in a baking dish.
  6. Bake for 30–35 minutes until peppers are tender.
  7. Top with cheese if desired and serve hot with extra rice on the side.

Notes

  • Feel free to substitute ground beef with ground turkey for a lighter option.
  • Adjust the seasoning according to your taste preferences.
  • These can be made ahead of time and baked just before serving.
