Spooky carved bell peppers filled with savory rice and beef for a festive Halloween dinner.
Ingredients

- 4 Green bell peppers
- 1 lb Ground beef (or turkey)
- 2 cups Cooked rice
- 1 cup Tomato sauce
- 1 Onion (diced)
- 2 cloves Garlic (minced)
- 1 tsp Italian seasoning
- 2 tbsp Olive oil
- Salt & pepper to taste
- Shredded cheese (optional for topping)
Instructions
- Preheat oven to 375°F (190°C) and cut the tops off bell peppers, scooping out seeds.
- Use a small knife to carve Jack-O’-Lantern faces into each pepper.
- In a skillet, sauté onion and garlic in olive oil, add ground beef, and cook until browned.
- Stir in rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Stuff each pepper with the filling and place in a baking dish.
- Bake for 30–35 minutes until peppers are tender.
- Top with cheese if desired and serve hot with extra rice on the side.
Notes
- Feel free to substitute ground beef with ground turkey for a lighter option.
- Adjust the seasoning according to your taste preferences.
- These can be made ahead of time and baked just before serving.
