Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the flour mixture to the butter mixture alternately with milk, starting and ending with the flour. Mix until just combined.
  2. Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  3. Make the Whipped Cream: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. If desired, add a few drops of pink food coloring to achieve a light pink hue.
  4. Assemble the Cake: Place one cake layer on a serving plate. Spread a thin layer of whipped cream. Add a layer of cherry pie filling and chopped maraschino cherries. Place the second cake layer on top and spread whipped cream over the top and sides of the cake. Decorate with additional whipped cream and cherries as desired.
