Description

This Lemon Blueberry Bundt Cake is moist, flavorful, and features a delightful glaze that complements the bright flavors of lemon and blueberries.


Ingredients

  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • 1½ teaspoons lemon zest (from 23 lemons)
  • 1/2 cup vegetable oil
  • 1 teaspoon lemon paste (or 2 teaspoons lemon extract)
  • 2 cups frozen wild blueberries
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease and flour a 9″ bundt cake pan and set aside.
  3. In a medium bowl, sift together the flour, baking powder, and salt.
  4. In a separate large bowl, whisk together sour cream, sugar, eggs, lemon zest, oil, and lemon paste.
  5. Add the flour mixture to the egg mixture, stirring until combined.
  6. Fold in the blueberries very gently, then pour cake batter into the prepared bundt cake pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Meanwhile, in a large bowl, whisk together the powdered sugar, lemon juice, vanilla extract, and lemon extract to make the glaze, adding a bit more lemon juice or powdered sugar if necessary to reach your desired consistency.
  9. Once the cake is baked, remove from the oven and let the cake cool for about 5 minutes.
  10. Put a plate or serving dish on the top of the bundt cake pan and flip the cake onto the serving plate.
  11. Drizzle the glaze over the cake and let it cool completely before slicing.
  12. Serve with a dollop of whipped cream and fresh blueberries. Enjoy!
