Description

This Cheesy Beef Rotini Bake combines ground beef, sweet corn, and cheddar cheese for a comforting dish perfect for any occasion.


Ingredients

  • 12 ounces rotini pasta
  • 1 pound ground beef
  • 1 cup sweet corn (canned or frozen)
  • 2 cups shredded cheddar cheese
  • 1 cup ranch dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil and cook the rotini according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add the ground beef and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  4. Stir in the sweet corn, garlic powder, onion powder, salt, and pepper into the skillet with the beef. Cook for another 2-3 minutes until well combined.
  5. Remove the skillet from heat and stir in the ranch dressing until the beef and corn are thoroughly coated.
  6. In a large mixing bowl, combine the cooked rotini and the beef mixture. Gently fold in half of the shredded cheddar cheese.
  7. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with the remaining cheddar cheese.
  8. Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Once done, remove from the oven and let it cool for a few minutes before serving.

Notes

  • For a bit of spice, consider adding some diced jalapeños or red pepper flakes.
