This Cheesy Beef Rotini Bake combines ground beef, sweet corn, and cheddar cheese for a comforting dish perfect for any occasion.

- 12 ounces rotini pasta
- 1 pound ground beef
- 1 cup sweet corn (canned or frozen)
- 2 cups shredded cheddar cheese
- 1 cup ranch dressing
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, bring salted water to a boil and cook the rotini according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the ground beef and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir in the sweet corn, garlic powder, onion powder, salt, and pepper into the skillet with the beef. Cook for another 2-3 minutes until well combined.
- Remove the skillet from heat and stir in the ranch dressing until the beef and corn are thoroughly coated.
- In a large mixing bowl, combine the cooked rotini and the beef mixture. Gently fold in half of the shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with the remaining cheddar cheese.
- Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
Notes
- For a bit of spice, consider adding some diced jalapeños or red pepper flakes.
- This dish can be made ahead of time and stored in the refrigerator before baking.
