Hearty Beef Stew

Description

A warming and filling beef stew perfect for cold days.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 jalapeño, seeded and minced
  • 1 (14 ounce) can diced tomatoes, undrained
  • 6 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1/4 cup chopped fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season the beef stew meat with salt and pepper.
  3. Add the beef to the pot and sear on all sides until browned. Remove the beef from the pot and set aside.
  4. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, red bell pepper, green bell pepper, and jalapeño. Cook for another 3-5 minutes, until the vegetables are tender.
  5. Stir in the diced tomatoes, beef broth, chili powder, cumin, smoked paprika, and oregano. Bring to a simmer.
  6. Return the beef to the pot. Reduce the heat to low, cover, and simmer for at least 1 hour, or until the beef is very tender.
  7. Stir in the black beans and corn. Cook for an additional 10-15 minutes, until heated through.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Ladle the soup into bowls and garnish with fresh cilantro.
  10. Serve with lime wedges on the side.

Notes

  • This stew can be made ahead of time and tastes even better the next day.
  • Feel free to add other vegetables such as carrots or potatoes.
