Description

Delicious mini caramel cheesecake bites topped with caramel sauce.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup graham crackers, crushed
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup caramel sauce
  • 1/4 cup heavy cream
  • 2 tbsp brown sugar

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.
  2. Prepare Crust: Mix the crushed graham crackers with melted butter and brown sugar until well combined. Press about a tablespoon of the mixture into the bottom of each liner to form a crust.
  3. Prepare Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract and heavy cream, continuing to mix until the batter is smooth.
  4. Assemble Bites: Pour the filling over the prepared crusts, filling each liner almost to the top.
  5. Baking: Bake in the preheated oven for 15-18 minutes or until the centers are set. Remove from oven and let them cool to room temperature. Once cooled, chill in the refrigerator for at least 2 hours.
  6. Add Caramel: Once chilled, pour a small amount of caramel sauce over each cheesecake bite.
  7. Serve: Optionally, sprinkle additional crushed graham crackers on top for added texture.
