Delicious mini caramel cheesecake bites topped with caramel sauce.

- 16 oz cream cheese, softened
- 1 cup graham crackers, crushed
- 1/2 cup sugar
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup caramel sauce
- 1/4 cup heavy cream
- 2 tbsp brown sugar
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.
- Prepare Crust: Mix the crushed graham crackers with melted butter and brown sugar until well combined. Press about a tablespoon of the mixture into the bottom of each liner to form a crust.
- Prepare Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract and heavy cream, continuing to mix until the batter is smooth.
- Assemble Bites: Pour the filling over the prepared crusts, filling each liner almost to the top.
- Baking: Bake in the preheated oven for 15-18 minutes or until the centers are set. Remove from oven and let them cool to room temperature. Once cooled, chill in the refrigerator for at least 2 hours.
- Add Caramel: Once chilled, pour a small amount of caramel sauce over each cheesecake bite.
- Serve: Optionally, sprinkle additional crushed graham crackers on top for added texture.

- Ensure that all ingredients, especially cream cheese, are at room temperature to create a smooth filling.
- The cheesecake should be slightly jiggly in the center when removed from the oven. They will set as they cool.
- Proper chilling is crucial for the best texture and flavor.
