Description

Mini Pineapple Upside-Down Cheesecakes are divine treats that combine a buttery crust, creamy filling, caramelized pineapple, and a cherry on top for a tropical delight.


Ingredients

  • 1 can pineapple rings
  • 1 cup graham cracker crumbs
  • 12 maraschino cherries
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream (optional for creaminess)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter; press into each liner for the crust.
