Ingredients

  • 1 cup creamy peanut butter (use natural peanut butter for best flavor)
  • 1/2 cup honey or maple syrup (maple syrup makes it vegan-friendly)
  • 2 cups rolled oats (old-fashioned oats work best)
  • 1/2 cup chocolate chips (mini chocolate chips can also be used)
  • 1 tsp vanilla extract (provides extra flavor)

Instructions

  1. In a large bowl, mix together the creamy peanut butter and honey (or maple syrup) until smooth.
  2. Stir in rolled oats, chocolate chips, vanilla extract, and a pinch of salt until everything is well combined. The mixture should be thick and sticky.
  3. Place the bowl in the refrigerator for about 30 minutes to make the mixture easier to roll into balls.
  4. Once chilled, scoop about a tablespoon of the mixture and roll it into a ball between your hands. Repeat until all the mixture is used.
  5. For a firmer texture, you can chill the balls once more before serving.
