- 24 chocolate sandwich cookies, crushed
- 5 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon peppermint extract
- 4–5 drops green food coloring
- 1½ cups heavy whipping cream
- ½ cup powdered sugar
- Whipped cream (for garnish)
- Chocolate shavings or mini chocolate chips
- Maraschino cherries (optional)
Instructions
- In a medium bowl, mix crushed chocolate sandwich cookies with melted butter until combined.
- Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Refrigerate 20 minutes to set.
- In a large bowl, beat softened cream cheese and granulated sugar until smooth.
- Add peppermint extract and green food coloring; mix until evenly tinted.
- In a separate bowl, whip heavy cream and powdered sugar to stiff peaks.
- Gently fold whipped cream into the mint cream cheese mixture until light and fluffy.
- Spoon filling into chilled crust and smooth the top.
- Refrigerate at least 4 hours or until fully set.
- Before serving, garnish with whipped cream, chocolate shavings, and optional cherries.
Notes
- For best results, allow the pie to chill overnight before serving.
- This pie can be made a day in advance and stored in the refrigerator.
