- 1 cup Creamy peanut butter
- 1 cup All-purpose flour
- 1/2 cup Unsalted butter
- 1/2 cup Granulated sugar
- 1/2 cup Brown sugar
- 1 Egg
- 1 tsp Baking soda
- 1/4 tsp Salt
- 1 tsp Vanilla extract
- 1 cup Powdered sugar (for filling)
- 2 tbsp Milk (for filling)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Cream butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla, then stir in flour, baking soda, and salt.
- Roll dough into balls, place on baking sheet, flatten with a fork in a crisscross pattern.
- Bake 9–11 minutes until lightly golden; cool completely.
- For filling: beat peanut butter, butter, powdered sugar, and a splash of milk until creamy.
- Spread frosting between two cookies to make sandwiches.
