Description

Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Unsalted butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1 Egg
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  • 1 cup Powdered sugar (for filling)
  • 2 tbsp Milk (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla, then stir in flour, baking soda, and salt.
  4. Roll dough into balls, place on baking sheet, flatten with a fork in a crisscross pattern.
  5. Bake 9–11 minutes until lightly golden; cool completely.
  6. For filling: beat peanut butter, butter, powdered sugar, and a splash of milk until creamy.
  7. Spread frosting between two cookies to make sandwiches.
