Description

Delicious and savory pepper steak made with ribeye strips and colorful bell peppers.


Ingredients

  • 2 to 2 ½ pounds ribeye steaks, sliced into thin strips
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons flour
  • 23 tablespoons avocado oil, plus extra if needed
  • 2 small onions, halved and sliced into thin semi-circles
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon white pepper
  • 3 medium-large bell peppers, cored and thinly sliced (about 3 cups)
  • 3 cloves garlic, minced
  • 5 tablespoons tomato paste
  • ½ cup beef stock or broth
  • to taste Rice or your favorite side dish
  • for garnish Chopped green onions

Instructions

  1. Place the sliced ribeye steak in a large bowl. Sprinkle with salt, black pepper, and flour. Toss well to evenly coat the beef strips with seasoning and flour.
  2. Heat 2-3 tablespoons of avocado oil in a large heavy-bottom skillet or cast-iron pan over medium-high heat. Once hot, add the beef in batches. Sear the strips quickly for about 2 minutes until browned on the outside but not cooked through. Remove cooked beef and set aside. Repeat until all steak strips are seared.
  3. In the same pan, add a bit more oil if needed. Add the sliced onions and sauté for about 10 minutes until they soften and become golden brown. Season with a pinch or two of salt and black pepper along with Italian seasoning, paprika, smoked paprika, and white pepper. Stir well to integrate the spices.
  4. Add the thinly sliced bell peppers to the pan with the onions and spices. Sauté for 2-3 minutes until the peppers are softened but still slightly crisp. Add the minced garlic and stir until aromatic, about 30 seconds.
  5. Stir the tomato paste into the vegetable mixture and cook for about 30 seconds to remove its raw flavor. Pour in the beef stock or broth, stirring to combine and form a flavorful sauce. Taste and adjust seasoning with additional salt or pepper if needed.
  6. Return the seared steak strips to the pan and stir to coat with the sauce. Simmer for 30 seconds to 1 minute just until the steak is warmed through and the sauce thickens slightly.
  7. Spoon the pepper steak over cooked white rice or your preferred side. Garnish generously with chopped green onions or fresh parsley for a burst of fresh flavor and color. Enjoy immediately.
