Instructions

  1. Activate Yeast: Warm the milk until it’s lukewarm. Mix with yeast and a teaspoon of sugar. Let it sit for about 5-10 minutes until frothy.
  2. Make the Dough: In a large bowl, combine the flour, pumpkin puree, sugar, salt, softened butter, eggs, and activated yeast mixture. Knead the mixture until a smooth and elastic dough forms (about 10 minutes by hand or 5 minutes in a stand mixer).
  3. First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size (about 1-2 hours).
  4. Shape the Rolls: Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball. Using kitchen string, tie each roll to create the pumpkin shape. You’ll need to make 4 equidistant ties around each roll to form 8 segments.
  5. Second Rise: Place the formed rolls on a baking sheet lined with parchment paper. Cover and let them rise for another 30-45 minutes.
  6. Prepare for Baking: Preheat the oven to 350°F (175°C). Beat the remaining egg and brush it lightly over each roll for a glossy finish.
  7. Bake: Bake in the preheated oven for 20-25 minutes or until golden brown.
  8. Add Stems: Remove the strings carefully. Insert pecan halves or pieces of cinnamon sticks into the top of each roll to create a “stem.”
