- 14 ounces Udon Noodles, cooked according to package instructions
- 2 tablespoons Vegetable Oil
- 1 medium Carrot, julienned
- 1 medium Bell Pepper, sliced
- 1 cup Broccoli Florets
- 1 medium Zucchini, sliced
- 2 tablespoons Soy Sauce
- 1 tablespoon Mirin (or a mix of sugar and water)
- 1 tablespoon Sesame Oil
- to taste Green Onions, for garnish, chopped
Instructions
- Start by preparing the udon noodles according to the package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the julienned carrot and sliced bell pepper. Stir-fry for about 2 minutes, then add in the broccoli florets and zucchini. Cook for an additional 3β4 minutes until the vegetables are tender but still crisp.
- Now itβs time to introduce the cooked udon noodles to the pan. Toss everything together, allowing the noodles to absorb some of the flavors.
- Pour the soy sauce, mirin, and sesame oil over the noodle mixture. Stir well for about 2β3 minutes until everything is evenly coated and heated through.
- Remove from heat and serve hot, garnished with chopped green onions.
