- 2 cups fresh cucumbers, diced
- 1 large ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Wash and prepare all vegetables. Slice cucumbers into half-moons and dice the avocado.
- In a large bowl, combine cucumbers, avocado, cherry tomatoes, and red onion.
- In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Drizzle the dressing over the salad and gently toss until well-coated.
- Cover and chill in the refrigerator for 15-30 minutes before serving.
