Description

A refreshing salad made with ripe tomatoes, creamy mozzarella, and creamy avocado, drizzled with olive oil and balsamic vinegar.


Ingredients

  • 2 cups ripe tomatoes, diced
  • 1 cup fresh mozzarella, cubed
  • 1 medium avocado, diced
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Wash and dry the tomatoes; dice them into bite-sized pieces.
  2. Cut the fresh mozzarella into cubes similar in size to the tomatoes.
  3. Halve the avocado, remove the pit, scoop out the flesh, and dice it.
  4. In a large bowl, combine the tomatoes, mozzarella, and avocado gently.
  5. Add torn basil leaves to the mixture.
  6. Drizzle with olive oil and balsamic vinegar; season with salt and pepper before tossing lightly.
  7. Serve immediately for optimal freshness.
