- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 1¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup dark chocolate chunks
- ½ cup caramel bits (or soft caramels, chopped)

Instructions
- In a large bowl, beat the butter, brown sugar, and white sugar together until the mixture is creamy and smooth. Add the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until everything is incorporated. Avoid overmixing to keep the cookies soft.
- Fold in the chocolate chunks and caramel bits until evenly distributed throughout the dough. Cover and chill for about 30 minutes—this helps the cookies stay thick and chewy when baked.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop the dough into balls (about 2 tablespoons each) and place them 2 inches apart. Bake for 10–12 minutes, until the edges are golden and the centers still look soft.
- While the cookies are still warm, sprinkle a little flaky sea salt on top. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.
