- 1 lb beef flank steak, sliced thin
- 2 cups bell peppers (1 red, 1 green), sliced
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1 cup beef broth
- 2 tbsp brown sugar
- 2 tbsp cornstarch
Instructions
- Slice the beef flank steak against the grain into thin strips.
- In a bowl, whisk together soy sauce, beef broth, minced garlic, brown sugar, and cornstarch until smooth.
- Layer sliced beef in the slow cooker followed by bell peppers and onions. Pour the sauce evenly over the top.
- Set the slow cooker on low for 6 hours or high for 3 hours.
- Once cooked, stir gently and serve over rice or noodles. Garnish with green onions if desired.
