Description

A delicious slow cooker corned beef recipe that is perfect for dinner.


Ingredients

Scale
  • 4 pounds corned beef (flat cut preferred)
  • 2 bay leaves
  • 1 head garlic
  • 3 whole cloves
  • 10 peppercorns
  • 5 allspice berries or small pinch ground allspice
  • 1 whole onion
  • 1 large head cabbage, cut in 4 pieces
  • 8 small carrots (optional)
  • 1/3 cup sour cream
  • 1/3 cup mayo
  • 2 T cream-style horseradish, or more to taste

Instructions

  1. Trim most of the fat off the corned beef before cooking as preferred.
  2. Cut the corned beef in half to fit your slow cooker if needed.
  3. Spray the slow cooker with non-stick spray if desired and place the corned beef in the slow cooker with a quartered onion.
  4. Add the seasoning package that comes with the corned beef, plus additional garlic, whole cloves, bay leaves, whole peppercorns, and allspice berries as preferred.
  5. Add enough water to barely cover the meat.
  6. Cook on low for about 5 hours, or until the meat is tender enough to pierce easily with a fork.
  7. While the corned beef is cooking, peel the carrots and cut them into diagonal pieces, cutting thicker carrots in half lengthwise to ensure even cooking.
  8. Cut the cabbage into quarters, leaving the core intact to hold the pieces together until serving.
  9. When the corned beef is fork-tender, add the carrots first and cook for 20-30 minutes, depending on desired firmness.
  10. Add the cabbage pieces and cook for another 20-30 minutes.
  11. For the Creamy Horseradish Sauce, whisk together the sour cream, mayo, and cream-style horseradish before serving.
  12. Serve the slow cooker corned beef hot and enjoy!

  • Cook time may vary based on your slow cooker, always check the vegetables with a fork for doneness.
  • I recommend not skipping the Creamy Horseradish Sauce for serving!
