Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 1 piece bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, reduce the heat to medium and add the onions and bell peppers. Sauté for about 4-5 minutes until softened. Stir in garlic and cook for an additional minute.
  5. Pour in the chicken broth and bring it to a simmer. Allow it to cook for about 2 minutes.
  6. Add in the heavy cream and mix well.
  7. Return the chicken to the skillet, cover, and reduce the heat to low. Let it simmer in the sauce for 10 minutes so the flavors meld together.
  8. While the chicken is simmering, prepare the rice according to package instructions.
  9. Once the chicken is tender and the sauce is creamy, serve the chicken over a bed of rice. Garnish with fresh parsley if desired.
