- 4 pieces boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 1 medium onion, chopped
- 1 piece bell pepper, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced

Instructions
- Season the chicken thighs generously with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken to the skillet and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, reduce the heat to medium and add the onions and bell peppers. Sauté for about 4-5 minutes until softened. Stir in garlic and cook for an additional minute.
- Pour in the chicken broth and bring it to a simmer. Allow it to cook for about 2 minutes.
- Add in the heavy cream and mix well.
- Return the chicken to the skillet, cover, and reduce the heat to low. Let it simmer in the sauce for 10 minutes so the flavors meld together.
- While the chicken is simmering, prepare the rice according to package instructions.
- Once the chicken is tender and the sauce is creamy, serve the chicken over a bed of rice. Garnish with fresh parsley if desired.
