- 4 Chicken breasts (butterflied)
- 2 cups Fresh spinach
- 1 cup Mushrooms (sliced)
- 1 cup Mozzarella or provolone cheese
- 2 cloves Garlic
- 2 tablespoons Olive oil
- Salt and pepper to taste
- 1 tablespoon Lemon juice
- Fresh thyme or parsley (for garnish)
Instructions
- Preheat oven to 375°F and line a baking dish with parchment paper.
- Sauté mushrooms and garlic in olive oil until tender, then stir in spinach until wilted.
- Pound chicken breasts flat, season with salt and pepper, and layer with the spinach-mushroom filling and cheese.
- Roll tightly and secure with toothpicks or kitchen twine.
- Sear the roulades in a hot skillet until golden on all sides.
- Transfer to the oven and bake for 20–25 minutes until cooked through.
- Slice into rounds, drizzle with pan juices, and garnish with herbs and lemon slices.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F.
- Feel free to substitute other cheeses based on preference.
