Description

Tender chicken breast rolled with garlicky spinach, mushrooms, and melted cheese, baked to golden perfection.


Ingredients

Scale
  • 4 Chicken breasts (butterflied)
  • 2 cups Fresh spinach
  • 1 cup Mushrooms (sliced)
  • 1 cup Mozzarella or provolone cheese
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • Salt and pepper to taste
  • 1 tablespoon Lemon juice
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Preheat oven to 375°F and line a baking dish with parchment paper.
  2. Sauté mushrooms and garlic in olive oil until tender, then stir in spinach until wilted.
  3. Pound chicken breasts flat, season with salt and pepper, and layer with the spinach-mushroom filling and cheese.
  4. Roll tightly and secure with toothpicks or kitchen twine.
  5. Sear the roulades in a hot skillet until golden on all sides.
  6. Transfer to the oven and bake for 20–25 minutes until cooked through.
  7. Slice into rounds, drizzle with pan juices, and garnish with herbs and lemon slices.
