A delicious and nutritious Sweet & Spicy Tofu Power Bowl that combines crispy tofu, roasted sweet potatoes, and fresh cucumber salad over a bed of jasmine rice.


Ingredients

  • 1 block firm tofu (cubed)
  • 1 medium sweet potato (cubed)
  • 1 cup cooked jasmine rice
  • 1 cup diced cucumber
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • ¼ cup chopped cilantro
  • ¼ cup spicy mayo (for topping)

Instructions

  1. Preheat oven to 400°F and line a baking tray with parchment paper.
  2. Toss sweet potatoes with 1 tbsp olive oil and roast for 25 minutes, flipping halfway.
  3. In a bowl, mix tofu cubes with soy sauce, sriracha, honey, and remaining olive oil; bake alongside for 20 minutes until crispy.
  4. Combine cucumber with chopped cilantro and a pinch of salt for a refreshing crunch.
  5. Assemble bowls with a base of jasmine rice, topped with tofu, sweet potatoes, and cucumber salad.
  6. Drizzle spicy mayo over the top.
  7. Serve warm with extra cilantro garnish for color and flavor.
