A delicious and nutritious Sweet & Spicy Tofu Power Bowl that combines crispy tofu, roasted sweet potatoes, and fresh cucumber salad over a bed of jasmine rice.

- 1 block firm tofu (cubed)
- 1 medium sweet potato (cubed)
- 1 cup cooked jasmine rice
- 1 cup diced cucumber
- 2 tbsp soy sauce
- 1 tbsp sriracha
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup
- ¼ cup chopped cilantro
- ¼ cup spicy mayo (for topping)
Instructions
- Preheat oven to 400°F and line a baking tray with parchment paper.
- Toss sweet potatoes with 1 tbsp olive oil and roast for 25 minutes, flipping halfway.
- In a bowl, mix tofu cubes with soy sauce, sriracha, honey, and remaining olive oil; bake alongside for 20 minutes until crispy.
- Combine cucumber with chopped cilantro and a pinch of salt for a refreshing crunch.
- Assemble bowls with a base of jasmine rice, topped with tofu, sweet potatoes, and cucumber salad.
- Drizzle spicy mayo over the top.
- Serve warm with extra cilantro garnish for color and flavor.
Notes
- Adjust the level of sriracha to control the spiciness.
- For a vegan option, use maple syrup instead of honey.
- Feel free to add other vegetables like bell peppers or avocado for extra flavor.
