Scale
  • 8 oz white chocolate, chopped
  • ½ cup fresh raspberries
  • 1 tsp lemon juice
  • 1 tbsp sugar
  • ¼ cup crushed biscuits or shortbread
  • 1 tbsp butter (melted)

Instructions

  1. Melt white chocolate gently over a double boiler or in short microwave bursts.

  4. Pour melted white chocolate evenly over the base.
  5. Swirl raspberry puree on top using a toothpick for a marbled effect.
  6. Sprinkle crushed biscuits and extra raspberries over the surface.
  7. Chill for 1 hour until firm, then cut into bars and serve.

Notes
