Instructions
- Melt white chocolate gently over a double boiler or in short microwave bursts.
- In a saucepan, cook raspberries, sugar, and lemon juice until thickened; strain to remove seeds.
- Mix crushed biscuits with melted butter and spread thinly on parchment paper as the base.
- Pour melted white chocolate evenly over the base.
- Swirl raspberry puree on top using a toothpick for a marbled effect.
- Sprinkle crushed biscuits and extra raspberries over the surface.
- Chill for 1 hour until firm, then cut into bars and serve.
