Description

Ingredients

  • 8 oz mascarpone cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 5 oz white chocolate, melted
  • 1 cup fresh raspberries, plus extra for garnish
  • 1 cup raspberry puree (fresh or store-bought)
  • 1 cup strong brewed tea or raspberry juice, cooled (for soaking)
  • 2024 ladyfingers
  • A pinch of salt

Instructions

  1. In a large mixing bowl, use an electric mixer to whip the heavy cream until soft peaks form.
  2. In another bowl, mix the softened mascarpone, powdered sugar, vanilla extract, and a pinch of salt until smooth.
  3. Slowly add the melted white chocolate into the mascarpone mixture, folding gently until well combined.
  4. Carefully fold the whipped cream into the mascarpone mixture until it’s homogenous and airy.
  5. In a blender, puree fresh raspberries until smooth. If desired, strain to remove seeds.
  6. Quickly dip each ladyfinger into the cooled tea or raspberry juice, ensuring it’s soaked but not soggy.
  7. In a rectangular dish, layer the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers.
  8. Drizzle half of the raspberry puree over the mascarpone layer.
  9. Add another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
  10. Top with the remaining raspberry puree, creating a ripple effect for visual appeal.
  11. Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or preferably overnight.
  12. Before serving, garnish with fresh raspberries and a light dusting of powdered sugar if desired.
