Description
A delicious twist on classic tiramisu with fresh raspberries and white chocolate.
Ingredients

- 1 cup heavy cream
- 8 oz mascarpone cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 5 oz white chocolate, melted
- 1 cup fresh raspberries, plus extra for garnish
- 1 cup raspberry puree (fresh or store-bought)
- 1 cup strong brewed tea or raspberry juice, cooled (for soaking)
- 20–24 ladyfingers
- A pinch of salt
Instructions
- In a large mixing bowl, use an electric mixer to whip the heavy cream until soft peaks form.
- In another bowl, mix the softened mascarpone, powdered sugar, vanilla extract, and a pinch of salt until smooth.
- Slowly add the melted white chocolate into the mascarpone mixture, folding gently until well combined.
- Carefully fold the whipped cream into the mascarpone mixture until it’s homogenous and airy.
- In a blender, puree fresh raspberries until smooth. If desired, strain to remove seeds.
- Quickly dip each ladyfinger into the cooled tea or raspberry juice, ensuring it’s soaked but not soggy.
- In a rectangular dish, layer the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers.
- Drizzle half of the raspberry puree over the mascarpone layer.
- Add another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
- Top with the remaining raspberry puree, creating a ripple effect for visual appeal.
- Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or preferably overnight.
- Before serving, garnish with fresh raspberries and a light dusting of powdered sugar if desired.
Notes
- Make sure the ladyfingers are not soaked for too long to avoid sogginess.
- Using a high-quality white chocolate enhances the flavor.
- Fresh raspberries can be substituted with frozen if not in season.
